Rats in the Attic: Update

Well the gurgling from the closet started dying down. No I’m not talking about the hitchhiker I tossed in there last weekend, I’m talking about the homebrew. Yesterday I transfered to my secondary fermenter.
Not sure how long I plan on leaving this in there. The honey slows down the fermentation, so I may go 2 more weeks, add the hops for dry hopping and wait one more week before bottling. Wes is claiming to be in town at the end of May, so I hope we have carbonated homebrew to drink. This seems like a reasonable goal.
Only problem I encountered when transferring came at the end. When replacing the airlock, a drop or two of water poured into the beer. Not much I can do about it, but let’s hope there was nothing nasty in that water.
Before I go, let me share a bit of good fortune with everyone. Make sure to invite new people to brew with you, you never know what might come from it. I had my father-in-law brew with me for this batch, and the next day, after coming home from work, I found a wort chiller sitting on my doorstep. It was a little dusty, a cobweb or two on it, but otherwise in perfect condition. I called him up and he said he’d found it months ago when cleaning out one of his rentals. He didn’t know what it was at the time, but it looked expensive, so he kept it in case anyone wanted it. When he saw it while we brewed he figured I would want it. Thanks Jim.
Since I already have a chiller and it has been tweaked to work in my kitchen, this one is going to Dave. I told Dave he has to come pick it up himself, but otherwise it’s all his. Enjoy buddy.
